I like the ones that surprise me by stretching my expectations of the game. No contest, the best custom scenario ever is the Ogre Mind-Control Facility.
For one-off experiences I second Neoncat, surprises are delightful. For Mauve Manticore repeat play I second Questor, don't want those too demanding. I find the e.g. goblin siege in MM1 too stressful and messy for my taste to really enjoy, while it was great a couple of times. Epic on repeat is a bit of a grind.
