This game goes from missions that require no effort to ones that are totally unbalaned in the space of 5 minutes. Sort it out. I'm now stuck at the campaign because every single enemy in this level is an ooze and peircing weapons are crap, they only hit half as much as blunt ones for no good reason whatsoever.
Try Chops. Hitting two oozes at once makes the lower damage more palatable. Bonus points if you buff up first.
As was already noted, there are a number of (mostly wizard-based) means of removing enemy armor -- and since Amorphous Body (and Only Bones, which you'll run into soon enough...) both count as armor, this results in stripping immunity until they draw another card. This unlike most RPGs in which an immunity is basically intrinsic to the monster itself and there's no way to remove it -- here, the vast majority of monster properties are solely based on their cards (hit points, size, victory point value being the obvious exceptions), and any card that is in their discard pile doesn't matter until it's drawn again. Since minion groups share the same hands and thus all armor cards, this means that Boiling_Armor will remove immunity from the entire group. Also, if low damage is an issue, as peonprop noted -- stack buffs. Frenzy spells boost melee damage, for instance (and damage from spells, too, but to a lesser degree). Blind Rage is both a handicap and a boost; a character with Blind Rage does more damage for every melee attack, but if he's holding unused attacks when the next turn starts, he'll take some damage. Even certain armors boost your damage (like the "horned plates" cards). Even something like Curse of Fragility can help; it only lasts for a turn, but it causes the target to take 2 more damage every time it takes damage, and that can be significant if, say, you hit it with a glob of fire (triggering the curse when the spell hits, and triggering it again when it burns at the beginning of the next turn). Aside from that -- the mission progression is supposed to make you rethink things a bit and encourage you to try new tactics. Blob-type monsters shake things up a bit by introducing a single immunity; some models have *both* blob-type monsters (often, but not always, protected by amorphous body to render them immune to crushing attacks) and skeletons (which are often protected by "Only Bones", which guards against slashing and piercing). There are pure-melee enemies; there are also some that have no melee attacks whatsoever. Some are particularly well shielded against missile attacks (lots of block/reflect missile), some against melee (lots of parry cards), and so forth. This will mean sometimes needing to rethink your approach, including swapping out gear for something better suited to the mission.
Removing armor got a lot harder when Armor Of Faith replaced Wavering Faith on every single item. Wavering Faith had its uses, but now it's gone.
