Like it says in the title; I've experienced this multiple times, where I will block an enemy's Predictable Stab, but it will not inflict damage on the attacking enemy. I've also noticed at least once when my Predictable Stab has been blocked, but it does not injure my character either. I'm not sure if the intention is actually that, should the attack be blocked, it will inflict 3 damage on the target regardless (in lieu of 5); that would seem to be more in keeping with the flavor text on the card... but I have not noticed this effect either.

Just to make sure, I did a test to confirm (as below) and it worked fine. I'll bet Glmg is going to stab HW_test1. Yup. Just like that. Glmg moved. HW_test1 tries to parry the attack - and succeeds! Predictable Stab was cancelled. Glmg took 3 Piercing damage. HW_test1 drew Bludgeon. HW_test1 discarded Parry.
Hi Phaselock, Unfortunately, I only noticed the bug when I was casually looking for them... by the time I got around figuring out how to properly report them (I did read the thread you linked before I started), the combat logs were long gone. For what it's worth, I observed the issue in dungeons level 6 or less... I've been trying to recreate the problem, but the dice gods are being spiteful. I'll update this thread if I'm able to recreate the issue.
I've never seen Predictable Stab activate the effect damage when blocked. I noticed it first when fighting the golems, who block constantly, but I've since blocked predictable attacks from lizardmen and they didn't see any damage. But I thought I saw it fail to activate once when there was only one armor, so it might be more complicated....
